Pickled Radishes?

We found ourselves with several radishes this weekend. It should not have been a surprise, because I did not stagger the initial planting. Nonetheless we had more radishes than we knew what to do with raw so I decided to pickle them.

A quick search on Google and I was I business. I ended up using this recipe from Chow.com cutting it in half and using apple cider vinegar, oh and I also forgot to cook the brine…

It’s funny how sometimes you end up never totally following the recipe.

We cleaned and cut all of the French Breakfast radishes and put them in a jar with the brine.

We stuck the soon to be pickled radishes in the fridge overnight. They were a success! I used them on a juicy father’s day hamburger and they were a refreshing balance to the hot & spicy Wickles pickles.
